Slice the squash in half and scoop out the seeds. Rub the inside with olive oil, sea salt and pepper and bake at 375F for approximately 20 minutes (until about 80% done) and remove from oven. For the filling, slice two boneless skinless chicken breasts into small pieces, toss with olive oil, fresh garlic, basil, sea salt, pepper and balsamic vinegar and cook until done. Remove the chicken, and in the same pan (utilizing all of the tasty chicken leavings) sauté cherry tomato’s, red onion, jalapeño peppers and mushrooms until soft and season to taste. Add cooked chicken into the vegetables and mix. Scoop the filling into the squash, top with freshly grated cheese and bake until the cheese is melted.
