Did you ever have a total brain fluff?
I found a recipe for a Chilies Rellenos Casserole at that cookware party I attended, lightened it up entered in my cookbook, started assembling the ingredients after slices all the veggies for a side of Tomatoes & Zucchini with baby bella mushrooms, usind the diced tomatoes with chili peppers in it.
I open the fridge to get the fat free sour cream & find, instead, the full fat variety! No time to run to the store, quicker to change recipe, adding fat & calories. Urk!
Where was my head when I bought that sour cream? Was that the day the Skinny Cow ice cream sandwiches were on sale? Oh well. The show must go on,... I told my partner what dinner would be tonight.
And yes, I'm having a Skinny Cow ice cream sandwich for dessert. :o}
