Hubby just bottled the kimchi after 4 days of fermenting on the countertop. Now it is in the jars and letting the gas escape through the lid. It'll sit on the countertop for five more days and then into the fridge it goes. We used a pint of starter from the last batch and it is very fermented already. Lots of really good probiotics.
