Yummy food day so I felt like documenting it! Just in case I go crazy & lose my mind/memory I can come back to this entry & repeat these food items!! = D
Lunch: Toasted whole wheat sandwich thins w/ Trader Joe's Blue Cheese & Roasted Pecan dip used as a spread, avocado, oven baked chicken breast, sun-dried tomatoes & aged NY white cheddar!
PM Snack: Basil pesto tilapia, garlic sauteed white mushrooms & gorgonzola cheese!
Dinner: Zucchini noodles, lemon soy sauce tofu, garlic sauteed baby Bella mushrooms, sun-dried tomatoes, feta cheese, cranberry walnut gorgonzola dressing & cayenne pepper!
Made all the reading in between worth while! Love it. 2 more packs of tofu, so I need to look up some marinade ideas to play with = D
