My son is eating spaghetti squash! He says it's not good but not bad, kind of neutral. I told him that was perfect for the sauce and he should just mix it in. He did and he's eating it now. I guess I need to pick up more.

YAY, Mommy (You)! My youngest son (9) helped me eat my strawberries with breakfast the other morning and asked for spinach and egg whites the other evening! I was thinking I'd let the good times roll for far too long to get the kids onboard against refined snacks. But they are making at least one smarter choice every day. I'm going to go look for spaghetti squash and introduce that too! THNX! It's great to know our parental choices can still have tremendous impact. :D

Thanks! Even the hubby ate it tonight. He said it tasted like nothing. I told him the same thing about the sauce and he agreed. Looks like spaghetti will be a weekly thing from now on. At least until the store stops carrying them for the season. Way to go on the egg whites and spinach!

Spaghetti squash is great, once you get past the fact that it doesn't really taste like the spaghetti you are use to eating. A great sauce helps to infuse it with the flavor, you want to have, and if you mix it with zucchini noodles, you can get the, al dente, texture of regular pasta as well. Add some Italian sausage, or great meatballs to the mix, and your tastebuds will be singing with pleasure. Great job on getting your husband, and son, onboard with eating it. :-)

I love spaghetti squash. I cook it up and shred it up. I saute some spinach and mushrooms and diced tomatoes in olive oil and toss it in the squash. Add some parm cheese delish! :)

Thanks for the great suggestions! Now that I know that they will eat it, it will be a item found regularly in the house. A veggie that we can agree on is surprising. I love broccoli, cauliflower, asparagus, and brussel sprouts. My husband won't eat those at all. When we have it I have to sneak it in. I have bags of veggies (the little individual sizes) just for him in the freezer. He wants corn (almost no nutritional value and high in sugar), peas, and carrots. Those last two are ok nutrition wise but are a little high in the natural sugar department. I can't believe we found another veggie to agree on apart from green beans.

I don't eat peas (or beans for the most part) it's not a taste thing but a texture one. They're too mushy for me and I'll pick them out if they're in my food. Bok choy is a big no from hubby. I cook with it once in a while but he won't eat it. I won't make two separate meals either. It's too much work.
