I called Darden, the parent company of The Olive Garden, to see if I could eat their Alfredo Sauce on my new Atkins plan. While they couldn't give me the actual recipe of their Alfredo sauce, they would allow me to ask them if certain ingredients were included and they would tell me via email if they were. So I asked about high carb ingredients such as flour, corn starch and sugar. Any one of those would be a deal breaker.

Here's the response I just got:

Dear Dominique,

You asked about the ingredients of our Alfredo Sauce. Upon review of this menu item, it does contain corn starch, flour, and sugar. Thank you for your inquiry.

Wow, you're kidding me. All three? I was just guessing! Really, OG? The flour and the corn starch I can understand, but why do you need to put SUGAR in your Alfredo sauce? Man, what a bummer. I wonder how many diabetics are aware of that? Go look up any Alfredo recipe and see how many have sugar in them. I just looked up 5 highly rated recipes, and not one had sugar. Butter? Oh yeah! Cream cheese? Sure! I mean, Alfredo isn't a low cal sauce, to be certain, but I'm a little surprised to see sugar in it, that's all.

Okay, I'm done ranting at the OG. I'm just disappointed that I cannot have the Alfredo sauce with some nice grilled chicken like I was planning. I will stick to just plain lettuce and bring my own dressing.

Meanwhile, back at the Atkins front, I've decided that calories do matter on Atkins. The first week has been great fun. Bacon, blue cheese, cream cheese. Now that I have it out of my system, I'm planning to keep my carbs and my calories a little lower and see if that makes a difference.

I dropped 1.5 pounds the first 2 days and I've been holding steady for 6 days eating between 1800-2100 calories a day, so I guess that's maintenance for me at this weight. Nice to know.

Thanks for all the great support from friends and others who suffer with insulin resistance here.

Yes, glad to hear puppy dog is getting well. MrsMole, I saw a recipe at FS called Green Beans Alfredo and I added it to my cook book. It is like Pasta Alfredo but no pasta. ;)

Dom, you are in the state that made organic famous. You should NEVER have to eat processed food. Nothing in a box or can anymore for me. Ever. That all has to have preservatives in it for shelf life. Not good. Of course my life is not your life, and I can go to the organic food store every day on my way back from my morning walk. I literally pass the 7 Grains store on the way home from the walking trail. I am in there at least 5 times a week. Even things like canned sauces in there have no preservatives. And eating in restaurants as much as it sounds like you do is a dagger in the heart of your weight loss endeavor. On the rare occasions I do go out, I will have salmon, and if the portion is bigger than a deck of cards, I will either box it for tomorrow or leave it on the plate, and steamed broccoli. If the entree comes with 2 sides, they are both steamed broccoli. Or I don't eat the vegetables at all if they come in butter. I am more curious about why you'd fret about 118 calories in broccoli (a high fiber complex carb) but want to eat Alfredo sauce. Here's a paste from the Livestrong site about broccoli. . . . A single cup of broccoli contains 288 mg of potassium, 43 mg of calcium, 81 mg of vitamin C, vitamin A, folate, magnesium, phosphorus, beta-carotene and lutein, which helps protect your eyes. . . . They call it "among the very best foods you can eat." But how many people will say "OH MY GOD!!! A stalk of broccoli has 20 grans of carbohydrate!!!" Carbs are NOT the devil.

Eddie, MrsMole was not upset about the broccoli carbs or calories, she was upset that the restaurant probably added sugar to it to keep its color fresh and green. Broccoli should only be about 30 calories and 6 carbs per cup.

Yup, no way broccoli should be that many calories without lots of extras added.
