My husband loves overnight chia seeds (1/4 cup) soaked in unsweetened vanilla almond milk. You can add flavoring like orange extract or chocolate extract. It's like a healthy tapioca pudding consistency. You can also top with fruit if having it.

Cottage cheese with fruit - fatfree cottage cheese has a lot of protein. I also like to add minced green onions and some salsa. I made zucchini muffins and have those with cream cheese. Also, sometimes I just have dinner leftovers because really, you don't have to be locked into "breakfast" foods.

I saute veggies(onions, carrots zuchinni, mushrooms, spinach, red and green peppers) basically whatever you like. I make a breakfast burrito with low sodium turkey bacon. Sometimes with an egg, and/or cheese, or any other kind of meat. I prep the veggies. They are also a side dish when I run out of ideas.

My favorite breakfast is while wheat flax waffles from Central Market (or from any health store, really). Takes 5 min to bake in the oven, then I top one with smoked salmon and the other with peanut butter. Super balanced, full of fiber and good fats!
