Breakfast, an overstuffed vegan omelette with diced fresh roots of gobo, yuca, turmeric, ginger, horseradish, galanga. Pine nuts and Brazil nuts. Parsley, heirloom tomatoes, zucchini, collard greens, cilantro, onions, garlic. Ancho and Anaheim peppers. Porcini, oyster, and woodear mushrooms. Vegan cheese and fake chicken crumbles. Topped with flax meal, chia meal, nutritional yeast, fenugreek sprouts, avocado, snow pea sprouts, and green salsa. I probably forgot something that's in it.

Along with peppermint espresso coffee with almond coconut creamer, sweetened with erythritol.

This wasn’t today’s breakfast, it was a couple of weeks ago. I made a vegan omelette this morning, but it tore as I was pulling it out of the pan, so it wasn’t pretty. It also didn’t have this many ingredients.
