Either veg breyani, or you count the individual foods which you used to make your meal.

Digital scale. Best companion for accurate calorie counting.
I usually let small amounts of vegetables go uncounted. Or if I'm feeling pedantic I do what Jasmine suggested and estimate from the total grams used per vegetable.
Main thing is the rice though.
