I'm trying a new recipe...Coconut-Ginger curry soup with chicken thighs, baby spinach, kale, mini bell peppers shallots and green cabbage...will post how it tastes!! Red pepper flakes added a nice bit of heat...was going to add a jalapeño, but was not needed...lol.
