redgirl1974's Logboek, 01 mei 16

Meal prep Sunday.. decided to love myself today and making a metric ton of food. Just taking a break to brag about it bc Im pretty proud of myself right now. Ive lost my way and stopped doing all the things I know that work for me like meal prep, journaling, logging, planning and more planning and posting here. Im not sure if its was boredom or laziness or a bit of both but Im ready to own it,again (i go thru these "phases"). Ive made it this far. Time to stop self doubting myself. If Im bored, try something different. If Im lazy, find a way to make it work or ask for help. With all that said, time to share what Im cooking: I roasted a whole cauliflower mmmmmm, turkey-zucchini poppers (meatballs really LOL), fried a whole pack of bacon, washed and cut celery, broccoli and cauliflower and made a spinach dip for snacking. Working on some fat bombs, gonna make a vegetable hash to use under fried eggs, boiling some eggs and im making some ribeyes and blue cheese wedge for dinner (a repeat for Friday meal). And I may make a chicken breast.. ok I will make a chicken breast. Cheers everyone !

LOL - I just mashed two heads of cauliflower with grassfed butter and garlic. And also oven cooked my bacon for the week. And, bought the rest of the weeks proteins and in the freezer. So happy you are feeling back on track.

Good job! I'm going to do the same thing when I get home. I liked prepping better even though the clean up was ugh I liked knowing what was for the next meal especially since I'm suppose to be eating every couple of hours.

Misty, the clean up was epic. But I got a lot done and I totally agree about knowing what to eat next. Im so excited for tomorrow's breakfast LOL .. and DH swept and mopped.:)

Glen, I use zucchini,bell pepper preferably a red or orange one, mushrooms and red onion. Add some garlic (just a little) and then I season with salt, pepper, paprika and thyme. I serve it under a fried egg.. its one of my favorite breakfasts. @Tracin64.. Ill be right over. LOL
