redgirl1974's Logboek, 03 mei 16

Ok, mojo finding its way to me slowly.. ive given up on my early morning work outs (i know the agony). Its too much and the 8-5 work schedule is only temp. Ill be back to 930-630 in a month or so. SO, Ive decided to embrace it instead of fight it. Im doing cardio in form of walks at the park across the street during my lunch hour and made a walking buddy today. JOY!! AND she works out at my Y and we are gonna try and go after work at 5 .. so Cardio=lunch time // lift= at 5pm before gym gets busy. Hoping it sticks and I like it.. gonna give it 1000000 %. I was sure to let her know that no worries if she cant make it. That is the schedule Im still gonna stick to alone or with my buddy. Im excited to be making new friends.

Diet is progressing nicely and Im starting to feel really good. Im looking forward to my burst of energy soon. Im trying something new.. I did not buy that huge clam shell of mixed salad greens bc I just let it go bad. I bought a few other different heads of lettuce and different types of veggies. I need variety.I think eating the same darn salads every week caused some of my issues. Time to live dangerously thru green beans and zucchini. Let do this !

Work does create a period of time, daily, where we sit..The walking should help. Good luck.

Trust me when I say I feel ya. I work from 2pm till 10PM. The problem with it is when I get up, The gym is PACKED!!!!! And I go to bed as soon as I get home. Regardless, I have stopped lifting till I reach my goal weight. I know, that sounds weird. But I have 225 pounds of LBM and im Actively TRYING to let a lot of it go. Right now its just water and glycogen storage that I don't need. Besides, I am not trying to be as big as a horse anymore. Good luck to you gal.

Glen, all the "experts" recommend blanching zucchini before freezing, but I just grate it and stick it in a freezer bag. Not sure about freezing pieces, they might get a bit mushy when thawed. The grated ones are fine, but I do squeeze out the extra moisture before using. Hmmm, wonder if the juice could be used in vegetable stock?

What I'd do is chop up a bit of zucchini and toss it in the freezer to see how it holds up.

glen, try one of those vacuum sealers. I got one at Sam's . It allows you to freeze anything.. then you can "vent" the packaging and micro. They pricey but worth it if you do a lot of prep ahead or grow your own veggies. I paid 100 for mine

Maybe try placing the sliced zucchini on baking sheet and place in freezer. When it is frozen, put in plastic bag. That way they will be frozen and will not stick together.

@Glen - zucchini can definitely be frozen without blanching. In fact, I think blanching would make it too mushy when frozen. It isn't the same texture as fresh, but works fine for soups, frittatas, scrambles etc.

@Pandasmom - I haven't made veggie stock with the juice but I've frozen it in cubes and thrown a few into veggie soups that have a chicken stock base. It really improves the flavor. I like it a lot!

Hey, Redgirl, what brand vacuum sealer do you recommend? I've been thinking about getting one for awhile, but don't know anyone who has actually used one. I don't really trust the ratings I see on some of the sites.
