I need recipe! Will you share? I`m trying to reduce amount of meat but my husband is such an animal so I really need some good meals and that one looks delish.

Hey thanks! 😁 I don't have a proper recipe but I basically fry onions and garlic, put in aubergine chunks then black beans. Add in Italian herb mix and veg stock. Add a little pepper or chilli if you like heat. I add balsamic vinegar for flavour but water if it starts sticking to pan. Then add tomato puree from tube, then canned tomatoes. Then leave to simmer til the aubergine is soft and the water from tomatoes has mostly gone :D I got a the Edamame spaghetti from Costco in Derby but couldn't find it last time I went :/
