Mr Coco took me out for my birthday dinner last night since I was busy Thursday night. Went to another great restaurant with an award-winning chef and it was fantastic. They serve fresh locally grown foods in season. I had a persimmon salad, roasted duck breast with confit and grits, and caramel apple tart. I'd never had a persimmon before, but I loved it. They served it sliced thin on the bottom of the bed of greens. The duck was served with cumquats and beets, an unusual but wonderful combination. The apple tart came with a walnut-fennel conserve, and I've never had fennel before, although I've seen it on cooking shows more often these days. I love trying new foods. Mr Coco brought some wine with us -- I think it was Domaine Faillenc Sainte-Marie Vin de Pays d'Oc Rosé. It was really smooth and sweet. Wanted to remember the name of it to serve at family Christmas dinner this year.

Happy Birthday Coco! Actually duck is surprising dietetic, if it's properly cooked. I use fennel in lots of things. I like the Florence fennel in thin slices in a salad, like you would add celery. I also used fennel seed when cooking poultry. It's actually good in turkey stuffing too. A Rose wine is excellent with Christmas ham, if you're planning for that.

Thanks, Rune! For Christmas dinner, we were thinking about turkey and pork tenderloin instead of ham. Mr Coco makes a chestnut stuffing with prunes that is out of this world. The rosé wine should be a hit with our older guests because they don't like dry wines at all.
