I'm so happy that I lost weight last week! I ate like I was PMSing, and still lost 1.5 pounds. I'm sure that the trend won't continue if I keep eating like crap, so I'm back on track this morning anyway.
I just found so many vegan junk foods. Ruffles, dark chocolate, vegan oreos to name a few. I bought some Nature Valley peanut butter granola bars, which are vegan and delicious for breakfast. I think that these will be an excellent temporary "poptart" fix for me. I do hope to wean myself off of processed products completely, but as with everything with me, baby steps is the way to go.
I am thinking about making some miso soup tonight, to see how I like it. I bought some Miso Paste from Whole Foods last week, and have yet to try it. Alicia says that miso soup is great for breakfast! I would have to wake up an hour early to make and eat the kind of breakfasts that she recommends in her book. But that's okay, I figure that if I eat whole grains, beans, and vegetables for two out of three meals, I'm doing well.
I feel great being vegan; I don't ever want to eat meat or dairy again. Of course, I'm not perfect, so I may slip some day, but The Kind Diet encourages forgiveness, and always being kind to yourself first. Which, I have to admit, has always been a difficult concept for me.
