YES!! Spaghetti squash goes BEAUTIFULLY under a yummy sauce!!! You bake it, cut in half, cut side down on a cookie sheet w/a ramakin with some water in it, about 30 mins, until it's "done". It will easly fork out when you rub the tines of the fork down the middle. It even LOOKS like spaghetti and tastes great with sauce over it!! Let us know what you think of it!

OH... the other thing you can do, is add chopped green beans, grated cauliflower and grated carrots to the sauce!! =D

My mom used to grate carrots in the sauce but what about trying spaghetti squash as Bully said...? I could not believe how good that was!

One squash should be plenty and maybe even for leftovers! I don't put anything on it, when I back it. It will get "a wilted" look to the edges and should be fork tender on the inside. It may take about 45 minutes to bake, depending on the size. You want to get a "spaghetti squash", it's a bright yellow one... ask a produce person to help you find it if you aren't for sure. :) I hope you love it as much as we do! We're growing them in the garden and they are almost sweet, home grown. =D Can't wait to hear what you think of it! *After it's "cooled" a bit, then "scrape" the fork down the inside (all of it) onto a plate and top with sauce... we also serve with a touch of sourdough garlic bread and parm cheese. I love to really season up the sauce, too! Hmmm... maybe I need to make that for dinner! lol

lol * bake *, not "back"! Some do oil/butter it, salt, etc, but I try to stick to salting an individual plate or not at all here, ... we use pepper as our table seasoning. :) It is always fine with nothing, though. :)

Most spaghetti squash comes with a little sticker telling you how to bake it. Poke it with a sharp knife/prong in several places to allow steam to escape... cut it in half and turn it upsdie down on the baking pan.. bake in a hot oven for about 45 min... then just like BT said, use a fork to scrape the "threads...spaghetti type strands" out of the shell. It really is good. I spray my baking pan with non-stick spry (Pam) but I never add butter or anything to it, just the spaghetti sauce on top, using it in place of spaghetti noodles. I think you might like this one... I also layered some low fat mozzerella cheese in-between my sauce/spaghtti squash and a little on top (sort of lasagna style) and baked it in the oven for just long enough to melt and start to brown the cheese on top, if you want to go for some extra calories.

I have never tried spaghetti squash either. but you are making me want to try it. I may have to pick up one and try it out. Our family LOVES spaghetti! So I may have to see how this one goes over with the kiddos.

Ohhh once you cut it in half, scrape out the seeds.. like cleaning out a halloween pumpkin... poke it to allow steam to escape, put it "face down" on the sprayed baking sheet.

One of the very best ways to make a great sauce is to take a roasting pan, and fill it with tomatoes. Bake them in a hot oven until they're brown and split. Then put them in the food processor and puree them skin and all. This makes a GREAT sauce. Then in a pan, start garlic & onions. Maybe some mushrooms, all in EVOO. Once these are good and sizzling, add the tomato mix. Add browned meat, plenty of s&p, and you're done! Herbs like basil or oregano add to the mix.

I always crack up laughing when I read about your veggie antics! but kudos to you for at least trying them!!! As for what to put in spaghetti sauce....when I want to bulk it up....I typically would add mushrooms, Red peppers, summer squash and zucchini. that combo seems to do it for me :) Have a great day! =)
