Grocery stores sell individual salads to go with the dressing and forks in the package. Maybe grab 1-2 the morning of your road trip? At least it will feel like a regular lunch and not something out of a vending machine.

if you have a big cooler you can stuff it with already prepared salads in a mason jars,love those things. It's stays good for the whole week,the only thing you'll need will be a fork :). I prep mine for the week and than i don't have to worry about "what to eat"
